Leeks with pink Grapefruit Vinaigrette
- 3 leeks (white part only) cut into 6-7 cm (3") sections
- ½ tsp salt
- Cover the leeks with cold salted water in a pot
- Bring to a boil. Cook for about 10 min. or until leeks are translucent
- Immerse leeks in very cold water to cool
- Cut one of the leek sections in half length-wise (for presentation) and cut remaining sections into approx. 1 cm thick round slices
Vinaigrette
- 1/3 c pink grapefruit juice
- 1 tsp + 1 tbsp old fashioned mustard
- 1/3 c olive oil
- ½ tsp salt
- Minced fresh ginger (size of garlic clove)
- Mix all ingredients together
- Pour on leeks
- Garnish whith a section ok pink grapefruit
Serve two as entrée or side salad
