Leeks with pink Grapefruit Vinaigrette 

  • 3 leeks (white part only) cut into 6-7 cm (3") sections
  • ½ tsp salt
  1. Cover the leeks with cold salted water in a pot
  2. Bring to a boil. Cook for about 10 min. or until leeks are translucent
  3. Immerse leeks in very cold water to cool
  4. Cut one of the leek sections in half length-wise (for presentation) and cut remaining sections into approx. 1 cm thick round slices

Vinaigrette

  • 1/3 c pink grapefruit juice
  • 1 tsp + 1 tbsp old fashioned mustard
  • 1/3 c olive oil
  • ½ tsp salt
  • Minced fresh ginger (size of garlic clove)
  1. Mix all ingredients together
  2. Pour on leeks
  3. Garnish whith a section ok pink grapefruit

Serve two as entrée or side salad
